Today, I'd like to give you an update on the progress of menu veganization from mid-April to mid-October. Spoiler: we're not letting up the pressure!
Our mission, our modes of action
Assiettes Végétales has set itself a wide-ranging mission throughout France. We are working every day to ensure that in our country,
40 to 50% of the food on offer in collective restaurants (4 billion meals/year) is vegeta*ian. But how?
1️⃣ By directing legislation towards increasing the frequency and quality of vegetarian meals, and ensuring they are properly enforced.
2️⃣ By influencing the contract catering sector as a whole, spreading good practice through our
Green Plates label.
3️⃣ By ensuring that
chefs are motivated by, as well as able to achieve, the vegetalization of their menus.
Vegetable Week in 216 canteens from October 9 to 13, 2023 📆 9 départements, 6 régions and 6 Crous, i.e. 216 canteens organized a Vegan World Tour Week with our association and offered world dishes such as tofu with maple syrup, jimabalaya or Egyptian-style lemon beans.
Involving local authorities in charge of school catering
👨🍳 Between mid-April and mid-October, we
trained
86 chefs-fes from school canteens in plant-based cooking. These chefs are responsible for the daily diet of approximately
41,500 pupils, including primary, middle and high school students.
🤹♀️ Between mid-April and mid-October,
41 dieticians were trained in plant-based dietetics in partnership with the
ONAV. Objective: to learn how to offer a balanced vegan option, as well as best practices for attracting diners.
Inflecting the law for school catering
⚖️ Our advocacy manager took part in a - rejected - proposal for a "vegan canteens" law, and met with the Ministry of Agriculture, Health, deputies and senators to mobilize them on this issue.
Officialize quantified targets for vegan menus at university
📣 For the first time, the CNOUS has announced quantified targets for increasing the proportion of vegetarian offerings for students in France. By 2025, the daily intake rate of the vegetarian option will rise to 30%, and to 50% by 2030, representing25 million meals.
University catering: anticipating and exceeding national targets
🌱 Thanks to our actions, the Crous de Strasbourg (1.4 million annual meals) offers
30 to 40% of its daily vegetarian offering. For Crous de Grenoble,
75,000 options or half of the offer is vegetarian every day.
👩🍳 Assiettes Végétales has trained
26 chef-fes from Crous de Rennes and Bordeaux in vegetarian cooking with
Cap Veggie. These chefs-fes serve a total of
18,600 meals every day.
